After several years spent working at the cooperative cellar of Estézargues,
Edouard Laffitte felt the urge to work the land and join his friends already embarked on the adventure.
But not being of agricultural origin, it was necessary to create everything.
It is following the proposal of Loïc Roure (Domaine du Possible) to share the old cooperative cellar
that he had just acquired in Lansac that Edouard settled in the Pyrénées-Orientales.
All that remained was to find the vines, so the choice fell on vines at altitude, rather north facing to promote freshness, fruit, and limit alcohol.
The ” Jajakistan ” being truly at the end of the world, the name of the domain imposed itself naturally.
Le Bout du Monde now extends over 7.7 hectares and 3 municipalities :
4 hectares in Lansac on Granite Arenas
2 hectares in Rasiguères on Schists
1.7 hectares in Cassagnes on Gneiss
The harvest is done by hand , the vinification is as natural as possible, in carbonic maceration ,
